Stuffed red pepper sandwich, Simple Kale Salad, Chocolate Pudding

These recipes are from episode 3- The Aloe Boost, aired on 08-19-11.

*Stuffed red pepper sandwich, burrito style

1 cup barley, soaked and rinsed for 4 days

2 red bell peppers

2 tomato

1 ear of corn

1/3 cup black olives

4-6 sprigs cilantro

1 Tbsp olive oils

1 jalapeño

1 avocado

pinch sea salt

pinch black pepper

Remove the tops of the red peppers, remove seeds, and set aside. Dice tomato, jalapeno, and cilantro. Cut corn off the cob and add it to the bowl. Combine all remaining ingredients in bowl. Stuff into raw red peppers and serve. May be picked up and eaten like a burrito, or used with a fork and knife.

 

*Simple Kale Salad for 4

1 bundle kale

½ cup olive oil

1 tbsp tamari or nama shoyu

1 tbsp yellow mustard

Wash and de-stem kale leaves..  Mix up dressing ingredients.  Pour on kale and massage into kale for 2 min.. Sprinkle salad with sunflower, hemp, or flax seeds or sprouted slivered almonds  for extra protein.

*Chocolate Pudding

2 cups fresh coconut meat

¾ cup coconut water

½ cup raw cacao powder

1/3 cup agave nectar

½ cup maple syrup

2 Tbsp vanilla extract or 6 drops Medicine Flower vanilla extract

¼ teaspoon sea salt

 

Simply blend in Vita-Mix. Chill in refrigerator to thicken up. Top with berries, nuts, or mint.
