Here are the recipes from Episode 26 ‘The Easter Call’
1 cup cacao powder
1 cup coconut oil (cold pressed organic)
½ cup coconut sugar
¼ cup raw honey, or raw agave or maple syrup
½ cup quinoa crisps
⅓ cup organic grass fed whey protein (optional)
1/ 2 cup goji berries (optional)
Melt coconut oil by placing the glass jar in hot water for 5-10 minutes. Combine cacao powder, coconut oil, coconut sugar, and your choice of liquid sweetener in blender. Add organic grass fed whey protein if you choose to, totally optional. Blend until smooth and creamy. Stir in quinoa crisps and/or goji berries and pour into bunny molds, or a glass baking dish for regular square cut fudge.
Yield: 2 large salads
Place all ingredients in blender and blend until well mixed. Chop up salad ingredients and put in large bowl. Pour desired amount of dressing over salad mixture. I like to cover the bowl with a plate and shake it until dressing is evenly dispersed onto veggies. A guest favorite; bright, flavorful, cleansing.
Red Cabbage Wraps / Baked
I head red cabbage
1 cup quinoa
1 bundle Lacinato (dino)kale
1 red bell pepper or 2 sweet peppers
2 green onions
2 tsp chili powder
1 ½ Tbsp Nama Shoyu
1 tsp sea salt
1 tsp black pepper
⅛ cup organic parmesan or asiago, or goat feta cheese (optional)
In medium saucepan, combine 2 cups water and 1 cup quinoa. Bring to boil, then reduce heat and simmer for 11-14 min until water is absorbed. While quinoa is cooking, chop kale, tomato and green onion. When quinoa is finished cooking, stir in raw diced veggies. The heat will blanch the veggies perfectly.
Cut off the stem end of the cabbage if it makes it easier to remove full leaves. Do your best to remove full cabbage leaves, fill with quinoa mixture, roll and place open side down in 9×12 glass baking pan.
Bake on 375 for 30 min. YUM! Serve with fresh salad.
